Winemaking | The grapes that give rise to this wine come from schist soils and are picked at their optimal point of ripeness, preserving all their virtues and qualities. These are harvested by grape varieties and into 20kg boxes to be transported to the winery where they stay 24 hours in a cold room for cooling before crushing. The must is pneumatically pressed and decanted until it reaches the necessary clarification. To subsequently ferment in a stainless steel tank for 2 weeks, with temperature control, to enhance all the aromas from the selected varieties for this wine. After fermentation, the wine remained on the fine lees for 4 months, under unique micro-oxygenation conditions in this type of deposit, which respect and amplify the character of the wine.
